Abstract

Artificial intelligence (AI) is transforming the foodservice sector by addressing challenges like food classification, quality control, and sales prediction. This study reviews key factors influencing AI adoption, categorizing them as homogenous (e.g., quality, trust, perceived usefulness) or heterogeneous (e.g., customer engagement, perceived risk). It highlights the role of TAM and UTAUT in understanding AI acceptance and suggests future research on organizational culture and regulation. Managerial focus should emphasize trust, ease of use, and transparent systems. The study offers practical insights for enhancing AI integration in foodservice through user-friendly and reliable technological approaches.
